High up on the altiplano, the old Peruvian man casts coca leaves to the four directions under the flickering light of his meagre fire. He calls out to the spirits, blessings us and asking for our protection. Then, laboriously, he rolls misshapen potatoes from the fire, scorched and blackened. Carefully he peels the tops, and sets about mixing some kind of sauce.
